This recipe is pretty similar to Challah, the German christmas
bread which has the main difference that it uses even more
sugar, raisins, etc. I've had good success making the egg
bread with almost no sugar and adding salt instead, for a
saltier bread. But as you guys remember, Mech's was just a
tiny bit sweet, which I like.
1 In medium bowl, put 1/2 cup warm water with dash sugar,
add pkg yeast. Let sit until foamy, yeast activated.
2 At the same time, heat in pan (on low) the milk, butter,
1/4 cup sugar, until butter is completely melted. DO NOT BOIL.
3 Add 1 cup water to pan with milk. When lukewarm/cooler,
add to yeast mix in bowl. Add 2 eggs and stir in the flour
until a firm, non-sticky dough is achieved.
Let it rise in warm (200 degrees max) pre-heated oven in a
sprayed bowl (wipe a bit of veg. oil around the inside) with
a towel over the top. (About 40-60 minutes). Remove when the
dough is about double.
Preheat the oven to 375 degrees afterward.
4 Punch the dough down and knead it well, cut into 2 pieces,
and each piece into 3 pieces. On a floured board, roll out
the 6 pieces into braids (1 1/2 feet long? depends if you
want a shorter loaf, or to bend into other shapes, letters,
etc.) Make braids and shape to your liking (Normally I join
3 pieces at one end with a thumb depression and then braid
the left and right piece over the middle).
Take the last egg and reserve the egg white (for a healthy
morning workout drink), beating the egg yolk with just a pinch
water as topping. Brush the yolk onto the braids, and sprinkle
with seeds if desired.
Place on buttered cookie sheets in 375-degree oven for 20-25
minutes. Serve hot.
