ingredients:
1 cup water
1/2 cup butter (1 stick)
1 cup flour
4 eggs
1 eggyolk
tsp salt
1 cup cheddar (or other soft) cheese

Pre-heat oven to 375.F
Let butter melt in saucepan with water, bring both to a boil.
Add 1 cup flour and stir like crazy while still very hot and forms a sticky ball.
Take off heat, incorporate 4 whole eggs, salt to taste, and 1 cup finely grated cheese - stirring very fast all the while. The trick is to incorporate everything well while hot.
Place tablespoonfuls of batter on a cookie sheet, and brush each ball with eggyolk. Optional - place a little grated cheese on top of each puff as gratinee.
Let bake in 375 F oven for 30-40 min. until puffed and golden but not burned on bottom. Cool slightly and serve warm.
